There is a particular pleasure in a breakfast that refuses to be rushed. At Piano, the morning starts with soft idlis and gunpowder, a ghee roast dosa cut into a slow spiral, and ven pongal finished with black pepper and cashew.
The filter coffee always comes last, poured tableside once the plates are cleared — a small ceremony that turns a meal into a morning. Guests linger over a second cup as the room fills and empties around them, in no particular hurry to be anywhere else.
